The perfect recipe to welcome Summer! - PROTEIN LEMON BLUEBERRY MUFFIN
INGREDIENTS
- 1 scoop of Chike Vanilla Protein Iced Coffee
- 2 cups oat flour
- 1/2 tsp lemon extract
- 1/4 cup of almond milk
- 1/4 tsp lemon zest

1/4 cup fresh blueberries
- 1 egg
- 1/2 tsp cinnamon
- Pinch of salt
- 1/4 tsp baking powder
DIRECTIONS
- Preheat oven to 400F
- In a small bowl whisk together the egg and almond milk
- Add your dry ingredients and combine until smooth.
- Add in lemon zest, extract, and blueberries.
- Grease a ramekin and pour the mixture in. Top with extra blueberries
- Bake for 20-25 minutes!
- Top with yogurt (optional)
- Enjoy!
