Protein Lemon Blueberry Muffin

The perfect recipe to welcome Summer! - PROTEIN LEMON BLUEBERRY MUFFIN

INGREDIENTS

      • 1 scoop of Chike Vanilla Protein Iced Coffee
      • 2 cups oat flour
      • 1/2 tsp lemon extract
      • 1/4 cup of almond milk
      • 1/4 tsp lemon zest
      • 1/4 cup fresh blueberries
      • 1 egg
      • 1/2 tsp cinnamon
      • Pinch of salt
      • 1/4 tsp baking powder

      DIRECTIONS

          • Preheat oven to 400F
          • In a small bowl whisk together the egg and almond milk
          • Add your dry ingredients and combine until smooth.
          • Add in lemon zest, extract, and blueberries.
          • Grease a ramekin and pour the mixture in. Top with extra blueberries
          • Bake for 20-25 minutes!
          • Top with yogurt (optional)
          • Enjoy!
