Protein Cinnamon Oatmeal Cookies

The type of cookie we all love...crispy on the outside and soft on the inside with the most delicious cinnamon flavor! - PROTEIN CINNAMON OATMEAL COOKIES

INGREDIENTS

      • 3 scoops of Chike Cinnamon Protein Iced Coffee
      • 1 ½ cup oats
      • ¼ cup coconut flour
      • ¼ tsp salt
      • ½ tsp baking powder
      • ½ cup brown granulated monk fruit
      • ½ cup monk fruit
      • 2 whole eggs (room temperature)
      • 1 yolk
      • 2 tsp of vanilla extract
      • ½ cup almond butter
      • ¼ cup raisins (optional)

FROSTING

      • 1 cup powdered granulated monk fruit
      • 1 tsp vanilla extract
      • 2-3 tbsp unsweetened almond milk

    DIRECTIONS

        • Preheat oven to 325 degrees
        • Mix all of the dry ingredients in a large bowl
        • Add the wet ingredients and incorporate well
        • Form dough into balls and cook for 12 minutes
        • Let it cool in the fridge. Mix the ingredients for frosting
        • Drizzle with frosting and enjoy!
